Hear ye, hear ye: I am a complete waffle fanatic.
I love them. I mean, LOVE them.
Not only do we have waffles almost every Sunday for breakfast, but every Tuesday night as well. And do you want to know something? I never tire of them. Never.
My brother got the biggest kick (and disappointment) when for my birthday dinner this year I had… you guessed it: waffles. Why, when you can have anything, would you choose something that we have every week? was his opinion. True, but it really is my favorite meal. And that’s the point of birthdays isn’t it? To have your favorite meals?
So it should be no wonder that right now you are staring at a stack of chocolate waffles – with cookie dough, no less.
What can I say? It’s an illness? I was born with a waffle shaped stomach?

Another one of my food obsessions (I have a few…) is cookie dough. Give me a carton of cookie dough ice cream and I’ll be scanning to find the parts that look like they have lots of cookie dough pieces. Once I find them, you can bet I’m digging the scoop in. So what a better combination could you ask for? Two of my loves harmonizing together beautifully.
I’m not sure how this, shall we call it inspiration, came about but I will tell you that a large part of it came from the blog, Deliciously Yum. She (Kathi) made these yummy looking chocolate cookies with cookie dough inside and said that the cookie dough did not bake with the cookies! So I figured I would try this with hopefully the same results in the waffles.
It’s hard to tell, but while the cookie dough bites may have baked a little, it’s not like your biting into cookies either. So I feel safe calling them cookie dough waffles.
Also, this ice cream. My favorite recipe. It’s so quick and easy; it’s no harder than making hot fudge sauce (you’ll be making that too) and is extremely yummy.
Plus, I’m celebrating a small victory in being a winner of an ice cream contest our local paper was running.

The lowdown: Mocha chocolate waffles which are made fun with the addition of chocolate chip cookie dough, make for a splendid dessert with little bites of happiness inside. If desired, make this super quick and easy ice cream recipe swirled with homemade hot fudge sauce to make for an awesome topping and amazing waffle experience!
- 1/4 C. granulated sugar
- 1/4 C. brown sugar
- 1-2 tbsp. milk
- 1/2 tsp. vanilla extract
- 1 1/4 C. all-purpose flour
- 1/8 tsp. kosher salt
- 1/3 C. mini I used semisweet chocolate chips
- 2/3 C. packed brown sugar
- ½ C. unsweetened cocoa powder
- 2 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 6 oz bittersweet chocolate chocolate chips work well
- ½ C. strong coffee
- 6 tbsp. ¾ stick unsalted butter
- 6 tbsp. espresso powder or instant coffee
- 4 large eggs separated
- 1½ C. milk
Add milk and vanilla and stir until incorporated.
Add flour and salt and beat until smooth. If dough is still crumbly add in a little more milk (no more than 2 tbsp. total).
Beat in chocolate chips. Roll cookie dough into ½ tsp. size balls (you can make them a little larger if you like big chunks) and place on a cookie sheet or plate.
Place cookie balls in freezer while you make waffle batter.
In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt. Set aside.
In a small pan set over a pan of simmering water, combine the chocolate, coffee, butter, and espresso powder. Stir until melted and blended.
In the bowl of a mixer (or using a hand mixer), beat the egg whites until soft, glossy peaks form.
In a medium size bowl, whisk together egg yolks, milk, and chocolate mixture.
Add the milk mixture to dry ingredients and mix until just combined.
Fold in egg whites.
Gently stir in cookie dough balls.
Place about ¾ C. batter on waffle iron and cook according to manufacturer's instructions.
Remove waffle from waffle iron and place on serving plate.
In a microwave safe bowl or cup, heat hot fudge sauce in microwave until warm.
Serve waffles warm with ice cream (optional) and reserved hot fudge sauce.
