Double Chocolate Peppermint Joe Joe Ice Cream | Sempre DolceIt’s so sad because by this time stores are having clearance sales, emails are going to be coming in about how if you missed ordering something you can still get a gift card, etc., etc. It’s just plain depressing is what it is, just depressing. I swear, one of these years (preferably next) I am going to get my shopping done early so I can (a.) enjoy the Christmas busyness  without being one of the mad people out there rushing, rushing; and (b.) so I can hull myself up in the house and not get on the web or ANYTHING. Just eat cookies, wrap presents, drink hot chocolate, and listen to Christmas music. Lot’s of Christmas music.

Actually, yesterday I was fortunate enough to be at home baking a million sheets of cookies. And even with having to listen to the complaining of my family on having to wait until Christmas before eating these cookies, (or in the case of one brother, having to sprinkle some peppermints on wet chocolate for me… I am SOO sorry… not.) it was quite enjoyable.

A couple of months ago, my mom gave me a report from what people were saying on the Trader Joe’s Peppermint Joe Joe ice cream (which is super tasty, BTW). Apparently, people were having issue with there not being Joe Joe in every bite – sin of all sins! So I decided to remedy that. While this is not a copycat recipe, I did do my own take with PLENTY of Joe Joe’s to go around, and this recipe is the result.

Now let’s lock the house door, grab a spoon, turn on some music, and eat the Christmas blues away – shall we?

Chocolate Peppermint Joe Joe Ice Cream

Ingredients

  • 1 (9.7 oz) box Dark Chocolate Covered Peppermint Joe Joe's (these come from Trader Joe's, just in case you didn't know :)
  • 22 Candy Cane Joe Joe's, divided
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 C. unsweetened cocoa powder
  • 2 tsp. vanilla extract
  • 2 cups (1 pint) heavy whipping cream

Instructions

  1. Place chocolate covered Joe Joe's in a large Ziploc bag. Using the flat surface of a meat tenderizer, crush into medium/large chunks. (you can go smaller if you wish, but I like my ice cream chunky!) Place in bowl/container, set aside, and repeat process with 11 Candy Cane Joe Joe's.
  2. In the bowl of a stand mixer fitted with the whisk attachment, beat whipping cream until stiff peaks form.
  3. In a large bowl, stir together sweetened condensed milk, cocoa powder, and vanilla. Stir until well combined.
  4. Fold in whipped cream until thoroughly combined.
  5. Gently fold in crushed Joe Joe's, folding just until combined.
  6. Pour into a 2 quart container (a freezer safe loaf pan works well).
  7. Crush 11 more Candy Cane Joe Joes' into medium/small chunks. Spread evenly over the top of ice cream. Cover and freeze for six hours, or until firm.
  8. If desired, serve with ganache or hot fudge topping.
